The Windows 2000 Services shown in the image below should be a good guide for what's really needed.
Application-specific services will vary, you probably have others running and/or not all the ones shown here.
Only change a few at once so you can go back easily if something stops working.
Never Disable The Remote Procedue Call(RPC) Service!!! See website below if it's already happened and you're looking for a cure.
